Nearing four weeks of lockdown in Almaty and supplies are holding up surprisingly well, especially now that spring greens are beginning to come on tap. This week our local veg shop had rocket, celery and sorrel – all the makings of a peppery green salad to perk up the lunch menu.
We’re coming to the end of our super-sized cabbage, which was bought in the early days of lockdown, so we decided to use the remaining leaves to make cabbage rolls, a popular dish in eastern and southern Europe.
We stuffed the leaves with some rip-red risotto, a recipe we made a few years back that combines coarse bulgur wheat with beetroot and walnuts (if you want a gluten-free option, you can use arborio rice or pearl barley instead).
Simmer the stuffed cabbage parcels in a tomato and herb sauce for thirty minutes for a winning lockdown lunch. It makes for a tasty veggie take on that beloved Ukrainian / Russian dish, golubtsi, or ‘little doves’, or dolma as they are dubbed in some parts of the Mediterranean and into the Caucasus.
Separate the leaves carefully from the cabbage. Place in boiling water for five minutes to soften. Put the leaves in cold water and then drain. Cut out the tough, lower bit of the stalk (about 2-3 cm). Place a tablespoon of filling above the cut and then fold and roll the leaves into cigar shapes.
To make the sauce, heat the olive oil in a frying pan, add the mustard seeds and when they start to pop, add the chopped spring onions, celery and parsley. Cook for five minutes and then add the chopped tomatoes. Add the tomato paste and water , stir well and bring to the boil.
Lay the stuffed leaves in an ovenproof baking dish and pour the hot tomato sauce over them. Cover the dish with tin foil and bake at 200 c for thirty minutes. Sprinkle the cooked cabbage leaves with basil leaves before serving with a green salad.
This time round on Knidos Cookery Club, we’re turning our attention to a winter classic from the UK – the Lancashire Hotpot. Our spiced up, veggie-friendly version replaces the meat traditionally used with red beans and red lentils and is topped off with sliced potatoes, helping to retain the hearty, comforting hit of the original.
This casserole originated in the north-west of England as a dish that could be left cooking slowly in the oven over a low heat while families worked from home spinning thread.
The term hotpot is thought to derive from the mixture of ingredients used, although it’s also claimed to be named after the clay pot originally used to cook the dish. It’s not to be confused with the Chinese Hotpotthat uses a steaming pot of stock placed in the centre of the table to cook ingredients.
Ingredients (serves 2)
125 g red lentils
250 g cooked red beans
3 medium potatoes
2 medium carrots
1 medium onion
1 stick of celery
1 garlic clove
50 ml olive oil
600 ml vegetable stock
1 teaspoon each of mustard seeds, coriander seeds, fenugreek seeds, cumin seeds, chilli flakes, turmeric
1 cinnamon stick
1 bay leaf
Heat the olive oil in a casserole dish or an ovenproof pan. Fry the onions, garlic, ginger and spices all together for five minutes or so over a medium heat. Add the diced carrot and celery and cook for five more minutes. Add the lentils and 300 ml of stock and cook over a low heat until the water is absorbed and the lentils are cooked but not mushy.
While this is cooking, boil the potatoes (cut into 1/2 cm thick slices) for 10 minutes, pour off the water and cover with cold water. Add the cooked beans and the rest of the stock to the lentils and stir well. Place the potato slices in layers over the top of the stew and pour some olive oil over them.
Put the casserole dish or pan into an oven heated to 200 c and cook for 30 minutes at this temperature until the potato slices are starting to go a golden brown colour. Serve immediately in individual bowls with a hunk of bread.
This time round on Knidos Cookery Club we’re cooking up a chowder, a creamy soup crammed with fresh, seasonal vegetables that’s ideal for the chillier nights of autumn.
These days chowder is a name given to any creamy soup that has been thickened with the addition of flour or crumbled crackers. The name of this soup is thought to come from chaudron, an old French word for a cauldron – it was originally brought to north America by sailors who made it as a fish soup thickened with ship’s biscuit and cream.
Some versions use a tomato base, but our version is based on the creamy base and uses coconut milk and chickpea flour to make the sauce. We’ve added some of the last of this year’s corn on the cob and some new season pumpkin, that vegetable that is a harbinger of the colder months of the year. Combined with the holy trinity of soup bases – onion, celery and carrot and a potato, this chowder, garnished with lemon zest and celery leaves, is a soup to savour.
Ingredients (for 3-4 servings)
One large potato
Two large carrots
Three sticks of celery
One medium-sized onion
One corn-on-the cob
200 g pumpkin
One bay leaf
Two teaspoons dried thyme
50 ml olive oil
Three tablespoons chickpea flour
One litre coconut milk (50 g desiccated coconut + one litre of water).
Make the coconut milk first by blending the dried coconut with the water using a hand-held blender for two minutes. Strain through a sieve separate the liquid from the leftover coconut, the latter can be saved and used to make energy balls, biscuits, cakes or added to your breakfast muesli.
Heat the olive oil in a heavy-based pan and then add the sliced onion and fry for five minutes over a medium heat. Add the diced carrot and celery and cook for another five minutes. Now add the chickpea flour and dried thyme and mix well. Now add the pumpkin, potatoes and coconut milk and a bay leaf.
Cook over a low heat, stirring occasionally, until the potato is just cooked. Add the juice of the lemon and half the lemon zest and stir well. Cook for a few more minutes and then remove the bay leaf and serve in bowls and garnish with the rest of the lemon zest and chopped celery leaves.
This time round on Knidos Cookery Club were welcoming cookery fans in Uzbekistan who can finally enjoy unfettered access to our superior vegan and vegetarian recipes after the government unblocked a host of websites, including WordPress, last week.
To celebrate this unprecedentedly momentous occasion, we’ll be riffing on laghman, a classic noodle dish from Uzbekistan. A friend recently turned up at KCC’s Almaty HQ with a proliferation of King Oyster Mushrooms (see the photo below), providing us with a challenge to come up with something tasty.
A quick root around the kitchen cupboards produced a pack of soba (buckwheat) noodles and some sesame seeds so we put a pan of water on to boil and chopped up some leek, celery and tomatoes and added a dash of wine for a rapid-fire stir fry involving the funky-looking mushrooms.
Ingredients (serves 4)
50 ml olive oil
two teaspoons cumin seeds
100 g celery
100 g leek
600 g king oyster mushrooms
400 g tomatoes
25 ml soy sauce
100 ml dry white wine
300 g Soba (buckwheat) noodles
Heat the olive oil in a frying pan and add the cumin seeds. Cook over a medium heat for a minute and then add the diced leek. After a few minutes add the chopped celery and cook for five minutes, stirring occasionally.
Put the leek and celery mixture to one side and put the diced king oyster mushrooms into the frying pan, add the soy sauce and cook over a low heat for ten minutes or so. If the mushrooms start to go dry, add a dash of water and stir.
Add the chopped tomatoes to the mushrooms and cook for five minutes, stirring occasionally. Add the leek and celery mixture and the wine and stir well. Braise everything for ten minutes or so until most of the liquid is absorbed.
While the mushroom mix is braising, put the soba noodles in a pan of boiling, salted water and simmer for four to five minutes. Drain the noodles and arrange on a bowl with the mushroom mix on top. Add a sprinkle of sesame seeds before serving.

To mark this momentous occasion, we’ve prepared some mini chebureki filled with spring greens. We’re using chebureki in this context to refer to a crescent-shaped pie. Usually they’re deep-fried but we decided to turn them into more of a pelmeni by boiling them. It’s both healthier and quicker.
Chebureki and pelmeni are from the family of little pies that are made from an unleavened dough – their cousins are Italy’s ravioli, Turkey’s manti, China’s wonton, Uzbekistan’s chuchvara and Kazakhstan’s tushpara, Ukraine’s varenyky and Poland’s pierogi – the list is endless.
Ingredients (makes up to 24)
For the pasta:
200 g wholewheat flour
4 teaspoons olive oil
100 ml water
pinch of salt
For the filling:
One small onion
2 sticks of celery
25 ml olive oil
One teaspoon cumin seeds
Make the pasta by sifting the flour into a large mixing bowl and then add the oil, a pinch of salt and half of the water in a well in the middle of the flour. Mix inwards from the outside with a wooden spoon and then add the rest of the water until the dough has absorbed all the flour.
Knead for ten minutes or so and then leave the pasta dough to rest in the fridge for at least one hour. While the dough is in the fridge, prepare the filling. Heat the oil in a frying pan, add the cumin seeds and then add the finely chopped onion. After cooking for five minutes, add thin slices of celery stick and the leaves and cook for three minutes. Now add the chopped up spinach and cook for another five minutes stirring frequently. Allow to cool before making the mini pies.
Roll the pasta out onto a lightly-floured surface to a thickness between 0.5 and 1.0 mm.Use a glass or a mug to cut out round shapes from the dough, add a teaspoon of cooled spring greens in the bottom half of the circle and moisten the inside edge around the filling with a little water and then fold the top over. Use a fork to seal the pasta pocket.
Bring a large pan of water to the boil and then add the little pies to the water and keep boiling over a low heat until they float to the surface. Remove with a slotted spoon and serve hot – they’re good served with sour cream or melted butter or just plain.
When combined with spices such as turmeric, cumin, ginger and black pepper, the mung bean can do a lot to help flush out unwanted material from your body. While some practitioners recommend following a detox diet based on mung bean soup for 7-10 days to really cleanse yourself, it’s quite a powerful process so we’d recommend a bowl or two every week as being beneficial to your general well-being.
Ingredients (Makes 3-4 servings)
200 g mung beans
One stick of celery
1 litre water
Four tablespoons tomato paste
One teaspoon turmeric
One teaspoon cumin
One teaspoon chilli powder
1cm fresh ginger
Wash and then soak the mung beans for at least four hours (the longer you soak them, the quicker they’ll cook). Then put them in a pan, cover with the water and add the turmeric, cinnamon, cumin and chilli powder.
Bring to a boil and then simmer for 30 minutes, add the tomato paste, grated carrot and courgette, the thinly-sliced celery and the minced ginger, stir well and simmer for another ten minutes or so. The mung beans should just be beginning to go soft. Pour into bowls and serve with a generous grind of black pepper.
Welcome back to Knidos Cookery Club, this time round we’re drawing on our summer trip to Spain to bring you a paella (Warning: any Valencians reading this, please stop now!) that’s packed with pumpkin and other seasonal vegetables such as celery and leeks.
With Halloween just around the corner, you might be looking for a dish that uses up some of the leftovers from carving out your Jack O’ Lantern – this rice combo should help shift some of the backlog.
Paella originates from Valencia in Spain, where it is taken very seriously. The name derives from the Old French word paelle for pan, which in turn is from the Latin word patella, which also means pan. The contemporary name refers to the shallow metal dish in which paella is prepared.
In essence, paella is a combination of whatever is to hand rather than a fixed, unchanging blend of ingredients. While visiting Dénia, which is part of the Community of Valencia, we had a great green paella made with artichokes one other green vegetables.
Ingredients (serves 2)
25ml olive oil
150g short grain rice
600ml vegetable stock
One teaspoon each of cumin/chilli powder/turmeric
heat oil in a frying pan (or paella pan if you have one)
add chopped leek and celery and sauté until soft
add spices and stir
add pumpkin cubes and cook for ten minutes, stirring occasionally
add vegetable stock
bring to a boil, then simmer to make a broth and allow it to reduce by half
add rice and simmer until the liquid is absorbed and the rice is cooked (around 20-30 minutes)
