KCC’s Buckwheat Cottage Pie

This time round on Knidos Cookery Club we’re using buckwheat, a cereal (or rather a pseudocereal) that has thus far been neglected on our site.  Buckwheat’s name is misleading as it’s not really wheat, but rather a plant that is more closely related to sorrel, knotweed and rhubarb, which makes it suitable for those of you on a gluten-free diet.

Buckwheat, or grechka, is wildly popular across the countries of the former Soviet Union and eastern Europe – you can find whole aisles in supermarkets dedicated to it. The groats are used to make porridge and the flour to make pancakes. In Japan, the flour is  used to make soba noodles.

We’ve taken that classic British comfort food, Cottage Pie, and replaced the meat with a mix of the nutty-tasting buckwheat and vegetables all topped with a thick slab of mashed potato – perfect fodder for the colder autumn and winter evenings and ready to eat in around an hour.

Ingredients (makes 4 servings)

  • 150 g buckwheat groats
  • One carrot
  • One medium-sized onion
  • One green pepper
  • Three medium-sized tomatoes
  • Three medium-sized potatoes
  • Six small dried mushrooms
  • 25 ml olive oil
  • 500 ml vegetable stock
  • One teaspoon sumac
  • One teaspoon chilli flakes
  • Two teaspoons dried thyme
  • One bay leaf

Method

  • Heat the olive oil in a heavy-based pan and add the minced onion. Cook for five minutes over a medium heat and then add the diced carrot and green pepper and cook for another five minutes, stirring occasionally. Add the sumac, chilli flakes and thyme and the chopped tomatoes and diced mushrooms.
  • Reduce the heat and cook for another 10 minutes then add the buckwheat and stir well. Pour the stock over the mixture, add the bay leaf and simmer for 20 minutes or so or until the moisture has been absorbed. While this is bubbling away, cook the potatoes, drain and then mash them.
  • Put the buckwheat mixture in the bottom half of a baking dish and then cover the mix with a layer of mashed potato. Run a fork across the top of the potato to get a ridged finish and than bake at 180 c for 30 minutes. Serve hot with roasted or  steamed, seasonal vegetables such as  cauliflower and pumpkin.

 

 

A Badass Peach and Halloumi Salad

In the dog days of summer, a persistent tap-tapping sound can be heard resounding around the Datca Peninsula. Look for people huddled over piles of green shells to find the source of the tapping. This summer’s almond crop is in and the best way to get to the badass nuts is by hammering the shell open – labourious but ultimately worthwhile work!

The almond, badem in Turkish, is an important crop on the peninsula – check out this post from a few years ago on the many uses for almonds. We got hold of some of this year’s crop and combined them with some grilled peaches and halloumi cheese to make a super-tasty summer salad.

We got the idea for the grilled peaches from a salad we had in Kaş, Turkey. We grilled the peach and halloumi slices on the barbecue until they took on the required charred appearance. The combination of the sweetness of the peach with the saltiness of the cheese is a winning one.

Ingredients (serves 3-4)

  • 12 almonds
  • 250 g halloumi
  • One large peach
  • One large tomato
  • One bunch of rocket leaves
  • One cucumber
  • Two green peppers
  • Four spring onions
  • One teaspoon capers
  • One teaspoon dried thyme
  • Olive oil
  • Pomegranate sauce

Method

  • Cut the peach into eight slices and grill until just starting to char. Cut the halloumi cheese into eight pieces and grill until it goes a golden-brown colour.
  • Roughly chop the rocket leaves and slice the cucumber and green peppers and mix together with the capers. Dress with the thyme, olive oil and pomegranate sauce.
  • Slice the tomato into wedges and arrange with the peach and halloumi slices on top of the green salad. Just before serving, place an almond on top of each halloumi slice and put four in the middle.

Lemony Artichoke and Avocado Pasta

This time round on Knidos Cookery Club we’re serving up a lemony pasta that combines artichoke hearts with avocado slices in a tomato sauce.

The earthy flavour of the artichoke goes well with the zingy lemon zest in this healthy and easy-to-prepare pasta dish.  We hadn’t tried artichoke and avocado in the same recipe before, but, on this evidence, we can assure you that it works perfectly!

Ingredients (serves 3-4)

  • Two green peppers
  • Six small tomatoes
  • 25 ml olive oil
  • One lemon
  • Four artichoke hearts
  • One avocado
  • 150 g dried pasta
  • 50 ml water

Method

  • Heat the olive oil over in a heavy-based pan a medium heat and fry the sliced green peppers for five minutes. Add the diced tomatoes and cook for five more minutes. Add the water and reduce the heat so the sauce is simmering. Place the artichoke hearts on top of the sauce, cover the pan and steam for 30 minutes.
  • While the artichokes are steaming, cook the pasta according to instructions. Prepare the zest of one lemon by grating the skin. Squeeze the lemon into the pasta sauce. Remove the artichoke hearts when cooked. When the pasta is ready, drain it and mix with the sauce.
  • Put a layer of pasta and sauce in a bowl, place an artichoke heart in the middle, arrange avocado slices around the artichoke and sprinkle lemon zest over the dish before serving.

Hasty Tasty Stuffed Peppers

This time round on Knidos Cookery Club we’re taking inspiration again from our recent Balkan odyssey. While on our mission to Albania, we tasted the local take on stuffed peppers and on returning to KCC H.Q. we decided to recreate this delicious dish with a few time saving tricks of our own devising.

Rice is the usual go-to base for stuffing peppers, but it can be a bit time-consuming to prepare properly. With the World Cup reaching its conclusion, we didn’t fancy spending too much time slaving away in the kitchen so we’ve used some coarse bulgur wheat, which just needs soaking in hot water for a short while before it’s ready to use.

We cooked the peppers alongside some cauliflower, broken up into large  florets, and some quartered tomatoes to make a ready made meal for two with only a green salad needed to complete the show, allowing plenty of time to sit down and enjoy what’s left of the football!

Ingredients (for two people)

Two medium-sized green peppers

Two medium-sized tomatoes

Half a cauliflower

50 g cooked green lentils

50 g coarse bulgur wheat

200 ml hot water

25 ml olive oil

One teaspoon cumin seeds

One teaspoon dried thyme

25 g  raisins or currants

Black pepper (a generous twist)

Method

Cook the green lentils in twice the amount of water (put the lentils in a cup and then measure out twice as much water) until they start to go mushy. Put the bulgur wheat in a bowl and add the lentils and 200 ml hot water, stir and leave until the water is absorbed (20-30 minutes). Add the cumin, thyme, raisins and black pepper to the bulgur wheat and stir in well.

Pre-heat the oven to 180 c and prepare the peppers by slicing the top off and scooping out the seeds. Fill the hollowed-out peppers with the bulgur lentil mix, place the top back on and place in an oven dish. Arrange the cauliflower florets and quartered tomatoes around the pepper.

Drizzle the olive oil over the vegetables, add 50 ml water and bake in the oven for      40-50 minutes until the pepper skins start to burn and the florets are turning golden brown. Serve with a green salad.

 

 

 

Eating Albania

Greetings from Albania, where, among other things, KCC has been on the trail of the byrek, the pie that fuels the Balkans.

From the capital Tirana to the resorts of the south via mountain strongholds such as Berat, we’ve tracked down some fine examples of this savoury pie. But more on this next time, as we haven’t yet had time to recreate this culinary delight at KCC H.Q.

KCC’S Albanian feast
This time round we’ll have a look at some great salads that we’ve encountered on our travels. While in Tirana we visited a restaurant called Mullixhiu which cooks up some great dishes with organic Albanian ingredients.
At this time of year, the full array of fruit and vegetables are coming into season and we had a great salad made from thinly sliced courgettes and plums with a courgette flower sauce and another featuring beetroot, spinach and scattered fragments of dried filo pastry.
We’ve made a salad based on the first one that includes veggies and fruit: courgettes, pears, green peppers and capers served on a bed of lettuce to be precise.

Waiting for a byrek to come along in Ksamil, Albania

With a spinach byrek sourced from one of the many byrektore shops in Ksamil a small resort on the Albanian Riviera, a tomato, pepper and onion salad, and some olives and white cheese, here’s our first Albanian feast.

Ingredients (serves 4)

One medium-sized courgette

One small pear

Two green peppers

One lettuce

Two juicy medium-sized tomatoes

One small red onion

A sprinkling of capers

Method

The key to the courgette salad is to make it just before eating – don’t let it sit around for too long. As for the tomato salad, make this one first and allow the flavours to mingle – the longer, the better.

Roughly chop the tomato and mix in a bowl with thin slices of red onion and green pepper. Set aside and let the flavours mix together while you make the courgette salad.

Shred the lettuce and line a serving bowl with it. Thinly slice the pepper and then the pear. Next slice the courgette as thinly as you can and then sprinkle the capers over the top. Add your preferred salad dressing and that’s it – you’re ready to go!
